When the kids were young, we found out they had to go gluten free for health reasons. The options 12 years ago were very limited, so we learned to bake gluten free for them. We wanted the breads or cookies or cupcakes to taste as close as possible to normal for them so they could still have their normal goodies. That is what we still strive to do today.
